The Kitchen
Mise is a working kitchen first and a caterer second. We started in 2014 cooking long-table dinners in a friend's wine cellar in Alfama and never lost the habit of writing the menu the week we cook it.
Catarina Vaz ran the pass at two Lisbon dining rooms before Mise, and got tired of menus printed three months ahead. The idea here was plain: buy what the coast and the Oeste are actually giving that week, write the board around it, and tell the client exactly what they are paying for.
Ten years on we have cooked in rooftops, quintas, museums and one lighthouse. The kit travels in flight cases and the kitchen rebuilds itself wherever the room is, but the sourcing never changes: market in the morning, board by the afternoon, service that night.

On the pass

Sous & fire
Runs live fire and the plancha on site. Ten years of wedding services in his hands.
Pastry
Almond, fig and honey are hers. Bakes the madeleines to order at the back of the room.
Floor & service
Builds the floor team for each room and keeps the pass and the tables talking.
Sourcing
The morning fish and most of the veg. Sea bass, carabineiro and whatever the boats brought in.
Two families an hour north grow our figs, tomatoes and almonds. We buy the glut and write it onto the board.
Cultured butter and cheese from the Beira hills, black pork and slow cuts from the Alentejo plains.

What travels
Plancha, two ovens, a cold line and the pass itself pack down and rebuild on site in half a day. We have cooked five courses out of a courtyard with no gas and a rooftop with one lift, so an awkward room is a plan, not a problem.
